This afternoon's lunch !
Stuffed mushrooms and brinjals...
The stuffing was chicken mince (Vegetarians could add boiled potato,
brinjal pulp and mixed vegetables with seasonings/masala of
your choice), capsicum, tomatoes and mushrooms with some of the
baked brinjal pulp that I scooped out after the first (Only brinjal)
bake. I added yesterday's chilli-tomato chutney for more flavour and
some grated cheese on top.
